A creamy and easy 30-minute Coconut Chicken recipe that transports you to a tropical paradise.

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts (cut into 1-inch cubes)
  • 1 tbsp cornstarch
  • 1 tbsp coconut oil
  • Salt & pepper (to taste)
  • 1 can full-fat coconut milk (13.5 ounce can)
  • 3 cloves garlic (minced)
  • 1 tbsp ginger (freshly grated)
  • 2 tbsp soy sauce
  • 1 tbsp lime juice
  • 0.5 tsp turmeric
  • 0.25 tsp red pepper flakes
  • Fresh cilantro (for garnish)

Instructions

  1. Coat the chicken in a bowl with salt, pepper, and cornstarch.
  2. Sear the chicken in coconut oil over medium-high heat until golden brown.
  3. Sauté garlic and ginger in the same skillet for about 30 seconds.
  4. Create the sauce by adding coconut milk, soy sauce, lime juice, turmeric, and red pepper flakes to the skillet.
  5. Simmer the chicken in the sauce for 5-7 minutes until cooked through.
  6. Serve immediately over jasmine rice and garnish with fresh cilantro.

Notes

Consider marinating the chicken for an hour for extra flavor. Adjust red pepper flakes for desired spice level.
