A refreshing and creamy dish of rice noodles tossed in a luscious peanut sauce, perfect for hot summer days and casual weeknight dinners.

  • 8 oz rice noodles
  • 1/4 cup peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 2 teaspoons sugar
  • 1 clove garlic, minced
  • 1 cucumber, julienned
  • 2 green onions, sliced
  • Crushed peanuts and cilantro for garnish

Instructions

  1. Cook the rice noodles according to package instructions. Once they’re perfectly tender, drain and set aside to cool.
  2. Prepare the peanut sauce by whisking together the peanut butter, soy sauce, sesame oil, rice vinegar, sugar, and minced garlic until smooth.
  3. Combine the cooled noodles, julienned cucumber, and sliced green onions in a large bowl.
  4. Dress the noodle mixture with the peanut sauce and toss until well coated.
  5. Garnish and serve chilled, topped with crushed peanuts and fresh cilantro.

Notes

For added flavor, consider adding sriracha to the peanut sauce or other vegetables like bell peppers and carrots.
