  • 1 cup sharp cheddar cheese, shredded
  • 1 cup Monterey Jack cheese, shredded
  • 2 cups whole milk
  • 4 tablespoons butter
  • 2 tablespoons all-purpose flour

  • Pepper to taste

Instructions

  1. Cook Pasta: Cook 1 cup elbow macaroni in generously salted boiling water until al dente (about 7-9 minutes). Drain thoroughly; do not rinse.
  2. Make Roux: In a heavy-bottomed pot, melt 4 tablespoons butter over medium heat. Whisk in 2 tablespoons all-purpose flour and cook for 2-3 minutes until a pale, nutty roux forms.
  3. Form Béchamel: Gradually whisk in 2 cups warm whole milk until the sauce is smooth and thickened, approximately 5-7 minutes.
  4. Add Cheeses: Reduce heat to low. Gradually add 1 cup shredded sharp cheddar cheese and 1 cup shredded Monterey Jack cheese, stirring continuously until melted and smooth.
  5. Season and Combine: Season the cheese sauce with salt and pepper to taste. Remove from heat. Stir in the cooked, drained macaroni until every noodle is fully coated.
  6. Bake: Transfer the macaroni and cheese mixture to a lightly greased baking dish. Bake in a preheated oven at 375°F (190°C) for 20-25 minutes, or until bubbly around the edges and golden brown.
  7. Rest and Serve: Remove from oven and let rest for 10-15 minutes before serving for the best creamy consistency.
