Fluffy and buttery pancakes reminiscent of those enjoyed at McDonald’s, perfect for a comforting breakfast experience.

  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • Salted butter for serving
  • Maple syrup for serving

Instructions

  1. Whisk together the Dry Ingredients: In a large bowl, combine the flour, sugar, baking powder, baking soda, and salt. Whisk until evenly mixed.
  2. Mix the Wet Ingredients: In another bowl, whisk together the buttermilk, egg, and melted butter until smooth.
  3. Combine Wet and Dry Ingredients: Gently pour the wet mixture into the dry ingredients. Stir until just combined; a few lumps are okay.
  4. Heat the Griddle: Preheat a griddle or non-stick pan over medium heat until a drop of water sizzles on its surface.
  5. Pour the Batter: Using a ladle, pour batter onto the hot griddle to form pancakes of uniform size.
  6. Let Them Cook: Cook until bubbles form on the surface, about 2-3 minutes.
  7. Flip and Finish Cooking: Carefully flip pancakes and cook for another 1-2 minutes until golden brown.
  8. Serve Warm: Serve immediately with salted butter and maple syrup.

Notes

For extra fluffiness, let batter rest for about 5 minutes before cooking. If buttermilk isn’t available, mix milk with lemon juice or vinegar and let it sit for 5 minutes.
