A delightful lemon loaf inspired by Starbucks, combining moist texture with a perfect balance of sweet and tart flavors.

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup buttermilk
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a loaf pan to prevent sticking.
  2. Combine the all-purpose flour, baking powder, baking soda, and salt in a mixing bowl.
  3. Cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then mix in the buttermilk, lemon juice, lemon zest, and vanilla extract.
  5. Add the dry ingredients to the wet mixture, stirring just until combined.
  6. Pour the batter into the prepared loaf pan, smoothing the top gently.
  7. Bake for 50-60 minutes or until a toothpick inserted comes out clean.
  8. Allow the loaf to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

Use fresh lemons for the best flavor. For a sweeter loaf, a lemon glaze can be drizzled on top after cooling.
