A vibrant and refreshing corn salsa that captures the essence of summer with sweet corn, fresh veggies, and zesty lime.

Ingredients

  • 2 cups corn (fresh, frozen, or canned)
  • 1 medium red onion, diced
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper (any color), diced
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño pepper, minced (optional)
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. Combine the fresh ingredients in a large mixing bowl: corn, red onion, cherry tomatoes, bell pepper, cilantro, and jalapeño (if using).
  2. Drizzle lime juice over the mixture and season with salt and pepper.
  3. Toss everything together until well combined.
  4. Serve chilled or at room temperature. Enjoy as a dip with tortilla chips or as a topping for tacos!

Notes

Let salsa chill for at least 30 minutes before serving to meld flavors. Store in an airtight container in the refrigerator for up to 3 days.
