  • 1 cup cottage cheese
  • 3 large eggs
  • 1/2 cup blueberries
  • 1/4 cup almond flour
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Blend the cottage cheese until it reaches a smooth and creamy consistency.
  3. Separate the egg yolks from the whites. Add the egg yolks, blueberries, almond flour, baking powder, vanilla extract, and a pinch of salt to the blended cottage cheese. Mix until combined.
  4. Beat the egg whites until stiff peaks form.
  5. Fold the egg whites into the cottage cheese mixture until just combined.
  6. Spoon dollops of the mixture onto the prepared baking sheet, creating cloud shapes.
  7. Bake for 20-25 minutes or until golden brown.
  8. Let cool slightly before serving.
