A nutritious and filling egg bake featuring cottage cheese, spinach, and colorful veggies, perfect for brunch or quick breakfasts.

  • 1 cup cottage cheese
  • 6 large eggs
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 cup spinach (fresh or frozen)
  • 1/2 cup diced bell pepper
  • 1/2 cup diced onion
  • Salt and pepper to taste
  • 1 tablespoon olive oil (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Whisk the eggs in a large bowl until well combined.
  3. Add the cottage cheese to the whisked eggs.
  4. Stir in the shredded cheese of your choice.
  5. Fold in the spinach, bell pepper, and onion, seasoning with salt and pepper.
  6. Heat olive oil in a skillet and sauté bell pepper and onion until softened (optional).
  7. Pour the vegetable-egg mixture into a greased baking dish.
  8. Bake for 25-30 minutes until the eggs are set and the top is golden brown.
  9. Allow to cool briefly, then slice and serve warm.

Notes

For extra fluffiness, add a splash of milk to the egg mixture. You can customize by adding herbs or spices, and ensure your baking dish is well-greased.
