Fluffy and wholesome cottage cheese pancakes perfect for breakfast or a post-workout treat.

Ingredients

  • 1 cup cottage cheese
  • 1/2 cup flour
  • 2 eggs
  • 1 tablespoon sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • Butter or oil for cooking

Instructions

  1. Combine the ingredients in a mixing bowl, stirring until smooth.
  2. Preheat a skillet over medium heat and add butter or oil.
  3. Pour the batter onto the skillet in medium sizes.
  4. Cook until bubbles form on the surface, about 2-3 minutes.
  5. Flip and cook for another 2-3 minutes until golden brown.
  6. Serve warm with toppings of your choice.

Notes

For extra fluffiness, allow the batter to rest before cooking. Store leftovers in an airtight container for up to 2 days.
