A delightful twist on traditional pizza, this Cottage Cheese Pizza Bowl is packed with nourishing ingredients and vibrant flavors.

Ingredients

  • 1 cup cottage cheese (Low-fat or full-fat)
  • 1 cup marinara sauce
  • 1/2 cup chopped bell peppers
  • 1/2 cup sliced mushrooms
  • 1/2 cup chopped spinach or kale
  • 1/2 cup shredded mozzarella cheese
  • To taste: olive oil, salt, pepper, sliced olives, diced onions, fresh basil

Instructions

  1. Preheat your oven to 375°F (190°C). Scoop in the cottage cheese into a beautiful bowl.
  2. Drizzle olive oil in a skillet over medium heat, then toss in diced onions, chopped bell peppers, and sliced mushrooms. Sauté until soft and fragrant, about 5–7 minutes.
  3. Stir in chopped spinach or kale and sauté for another 2-3 minutes; the greens should maintain some crunch.
  4. Layer the cottage cheese at the bottom of a baking dish, followed by sautéed vegetables, marinara sauce, and shredded mozzarella cheese.
  5. Bake in the preheated oven for about 15-20 minutes, until the cheese is bubbly and golden.
  6. Remove from the oven and garnish with sliced olives and fresh basil.

Notes

For a spicier kick, add red pepper flakes or for a creamier texture, include a dollop of ricotta on top.
