A quick and flavorful weeknight dish featuring bowtie pasta, chicken, and broccoli, all tossed in a delicious creamy lemon butter sauce.

  • 1 lb chicken breast, cut into pieces
  • 1 cup broccoli florets
  • 1/2 cup cowboy butter (or regular butter with garlic and herbs)
  • 1 lemon, juiced
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Cook the bowtie pasta according to the package instructions. Once it reaches that perfect al dente state, drain it well and set it aside.
  2. Melt the cowboy butter in a large skillet over medium heat.
  3. Add the chicken pieces to the skillet, sprinkle with salt and pepper, and cook until browned and cooked through, about 5-7 minutes.
  4. Incorporate the broccoli florets and sauté until bright green and tender, about 3-4 minutes.
  5. Combine the lemon juice, cooked pasta, and chicken-broccoli mixture, tossing to coat everything in the sauce. Heat through for a minute or two.
  6. Serve warm, garnished with fresh parsley.

Notes

For a quicker dinner, chop chicken and broccoli while pasta is cooking. Substitute chicken with chickpeas or sautéed mushrooms for a meat-free option.
