  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1/2 red onion, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh cilantro, chopped
  • 1 avocado, diced
  • 1 lime, juiced
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Prepare the Veggies: In a large bowl, combine the black beans, corn, red bell pepper, green bell pepper, red onion, cherry tomatoes, and cilantro.
  2. Add Creaminess: Gently fold in the diced avocado to the mixture, taking care not to mash it.
  3. Whisk the Dressing: In a separate small bowl, whisk together the lime juice, cumin, salt, and pepper until well combined.
  4. Combine Everything: Pour the dressing over the salad mixture and toss everything gently to ensure it’s evenly coated.
