A comforting and flavorful dish combining Cajun seasoned chicken with creamy garlic rice, perfect for weeknight dinners or special occasions.

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon Cajun seasoning
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 2 cups chicken broth
  • 1 cup long-grain rice
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Season the chicken breasts generously with Cajun seasoning, along with salt and pepper to taste.
  2. Sear the chicken in a large skillet with olive oil over medium-high heat until cooked through, about 5-6 minutes on each side.
  3. Sauté the minced garlic in the same skillet for about 1 minute until fragrant.
  4. Combine chicken broth and rice, bring to a boil, then reduce heat, cover, and simmer for about 15 minutes.
  5. Slice the chicken into bite-sized pieces while the rice is cooking.
  6. Stir in heavy cream and return sliced chicken to the skillet, cooking together for an additional 2-3 minutes.
  7. Garnish with freshly chopped parsley and serve hot.

Notes

For lighter options, substitute half-and-half or coconut milk for heavy cream. It can also be made with shrimp or added vegetables.
