Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 package gnocchi
  • 1 cup heavy cream
  • 1 cup spinach
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning

Instructions

  1. Sauté the chicken in a large pot with olive oil over medium heat until browned.
  2. Add the onion, carrots, and celery; sauté until softened.
  3. Incorporate the garlic and cook for another minute.
  4. Bring in the chicken broth and bring to a boil.
  5. Add the gnocchi and cook according to package instructions.
  6. Lower the heat and stir in the heavy cream and spinach; cook until spinach is wilted.
  7. Season with salt, pepper, and Italian seasoning before serving.
