This comforting casserole features tender chicken in a rich, creamy cheese sauce, combined with fresh spinach for a delightful family meal.

  • 2 boneless skinless chicken breasts (large)
  • 2 tablespoons olive oil (divided)
  • 3 cloves garlic (minced)
  • 1 tablespoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups fresh spinach
  • 8 ounces cream cheese (softened)
  • 1 cup shredded mozzarella cheese (divided)
  • 1/2 cup Parmesan cheese (optional)

Instructions

  1. Sauté the Aromatics In a large skillet over medium heat, add 1 tablespoon of olive oil. Toss in the minced garlic and let it sizzle for about a minute until fragrant.
  2. Brown the Chicken Add the chicken breasts to the skillet, seasoning them with Italian seasoning, salt, and black pepper. Sauté for 6-8 minutes on each side until golden brown and cooked through. Remove from heat and let rest.
  3. Prepare the Spinach In the same skillet, add the remaining tablespoon of olive oil. Toss in the fresh spinach and cook until wilted, approximately 2-3 minutes.
  4. Mix the Cheeses In a mixing bowl, combine softened cream cheese, half of the mozzarella, and the cooked spinach. Stir until well blended.
  5. Combine Chicken and Cheese Mixture Chop the cooked chicken into bite-sized pieces and fold it into the cheesy spinach mixture.
  6. Transfer to the Casserole Dish Pour the chicken and spinach mixture into a baking dish, spreading it out evenly.
  7. Add the Toppings Sprinkle the remaining mozzarella cheese over the top, and add Parmesan if desired.
  8. Bake to Perfection Preheat your oven to 350°F (175°C) and bake the casserole for 20-25 minutes, until the cheese is melted and bubbly.
  9. Cool and Serve Let it sit for a few minutes before serving.

Leftovers can be stored in an airtight container for up to 3 days. Reheat in the oven or microwave before serving.
