A warm and comforting soup featuring savory chicken, pillowy gnocchi, and vibrant spinach in a creamy broth.

Ingredients

  • 1 lb chicken breast
  • 16 oz gnocchi
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup spinach
  • 1 carrot, chopped
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • Salt and pepper to taste

Instructions

  1. Place the chicken breast at the bottom of the slow cooker.
  2. Add the chopped onion, carrot, and minced garlic directly on top of the chicken.
  3. Pour the chicken broth over the ingredients, ensuring everything is well covered.
  4. Cook on low for 6-8 hours or high for 3-4 hours.
  5. Once the chicken is cooked, shred it using two forks directly in the pot.
  6. Add the gnocchi and spinach, then stir in the heavy cream.
  7. Cook on high for an additional 30 minutes until the gnocchi is tender.
  8. Season with salt and pepper to taste and serve warm.

Notes

Pair with crusty bread or a side salad for a complete meal. Leftovers can be stored in an airtight container for 3-4 days.
