A delightful twist on Mexican street corn, this creamy version is perfect as an appetizer or side dish.

Ingredients

  • 4 ears of corn, husked and cleaned
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 cup cotija cheese, crumbled
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • 1/4 cup chopped cilantro
  • Salt to taste
  • Tortilla chips for serving

Instructions

  1. Grill the corn until it’s perfectly charred, roughly 10 minutes. Let it cool slightly before cutting the kernels off the cob.
  2. Whisk together the mayonnaise, sour cream, lime juice, chili powder, and salt in a separate bowl.
  3. Stir the corn kernels into your prepared mayo mixture until everything is well combined.
  4. Fold in the crumbled cotija cheese and chopped cilantro.
  5. Spoon the mixture into small cups, serving alongside crispy tortilla chips for easy dipping.

Notes

Adjust the spice level by modifying the amount of chili powder used. For a variation, add diced avocados or jalapeños.
