A comforting and creamy mushroom risotto that brings warmth to your dining table with its rich flavors and creamy texture.

Ingredients

  • 1 cup arborio rice
  • 4 cups vegetable or chicken broth
  • 1 cup mushrooms, sliced
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup parmesan cheese, grated
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Warm the broth in a saucepan over low heat.
  2. Sauté the onions and garlic in olive oil and butter until translucent.
  3. Cook the mushrooms until tender.
  4. Toast the arborio rice for about 2 minutes.
  5. Add the warm broth one ladle at a time, stirring constantly.
  6. Simmer for 18-20 minutes until creamy and al dente.
  7. Finish with grated Parmesan, seasoning with salt and pepper.
  8. Garnish with fresh parsley and serve warm.
