A nostalgic and comforting dessert made with creamy whole milk and sweet spices.

  • 1 cup arborio rice
  • 4 cups whole milk
  • 1 cup sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 2 large eggs
  • 1/2 cup raisins (optional)

Instructions

  1. Combine the rice, milk, sugar, and salt in a large saucepan. Bring to a boil over medium heat.
  2. Reduce heat to low and simmer, stirring frequently, until the rice is cooked and the mixture thickens (about 20-25 minutes).
  3. In a small bowl, whisk the eggs and add a few tablespoons of the hot rice mixture to temper the eggs.
  4. Slowly add the egg mixture back into the saucepan, stirring constantly.
  5. Stir in the vanilla extract, ground cinnamon, and raisins if using.
  6. Cook for an additional 3-5 minutes until thickened.
  7. Serve warm or chilled. Enjoy!
