Roasted Garlic Mashed Butternut Squash

A cozy side dish that combines the sweet earthiness of butternut squash with rich, creamy flavors of butter and roasted garlic.

Ingredients

  • 1 butternut squash, peeled and cubed
  • 4 cloves of garlic, roasted
  • 2 tablespoons of butter
  • 1/4 cup of heavy cream or milk
  • Salt and pepper to taste
  • Optional: Olive oil for roasting
  • Optional: Fresh herbs for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the butternut squash into cubes, toss with olive oil, salt, and pepper, and spread evenly on a baking sheet.
  3. Roast in the oven for about 25-30 minutes or until the squash is tender and starts to caramelize.
  4. Add the garlic cloves wrapped in aluminum foil to the oven for the last 10 minutes of roasting.
  5. Transfer both the roasted squash and garlic to a mixing bowl.
  6. Add butter and heavy cream (or milk) and mash together until creamy and smooth.
  7. Adjust seasoning with additional salt and pepper as desired.
  8. Serve warm, garnished with fresh herbs if desired.

Notes

For an even richer flavor, consider adding a pinch of nutmeg or cinnamon to the mash.
