A warm and comforting creamy sausage soup made with spicy Italian sausage and fresh vegetables, perfect for chilly evenings.

Ingredients

  • 1 pound Italian sausage
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups spinach
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning

Instructions

  1. Brown the sausage in a large pot over medium heat until browned. Drain excess fat.
  2. Sauté the onion, carrots, celery, and garlic until tender.
  3. Add the chicken broth and bring to a boil.
  4. Mix in the heavy cream, spinach, Italian seasoning, salt, and pepper.
  5. Simmer for 10 minutes to meld flavors.

Notes

For a creamier version, substitute half the heavy cream with cream cheese or sour cream. You can also use frozen spinach; just thaw and drain it well before adding.
