A comforting and creamy tortellini dish with Italian sausage and fresh tomatoes, perfect for busy weeknights or special occasions.

  • 20 oz fresh cheese tortellini
  • 1 lb Italian sausage, casings removed
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach
  • 1 cup heavy cream
  • 1 can (14 oz) crushed tomatoes
  • 1 cup shredded mozzarella
  • 1/2 cup grated parmesan
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes
  • Salt and black pepper to taste
  • 2 tbsp olive oil
  • Fresh basil leaves for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add Italian sausage, breaking it apart, and cook for 5-6 minutes until browned and cooked through.
  2. Add minced garlic and sauté for about 30 seconds until fragrant.
  3. Add cherry tomatoes to the skillet and cook for 3-4 minutes, pressing them lightly to burst.
  4. Mix in the crushed tomatoes, heavy cream, Italian seasoning, and red pepper flakes. Let this simmer on medium-low for 5 minutes until it thickens slightly.
  5. Add fresh tortellini directly into the sauce. Stir gently, cover, and cook for 4-5 minutes, or until the tortellini is tender and puffed.
  6. Stir in fresh spinach and wilt for 1-2 minutes, allowing it to soften into the dish.
  7. Scatter mozzarella over the top, cover, and let it sit for 1 minute to melt beautifully.
  8. Top with freshly grated parmesan and fresh basil leaves. Serve immediately in wide bowls alongside your favorite crusty bread.
