Delicious roll-ups filled with creamy Alfredo sauce and succulent shrimp, perfect for weeknight dinners or gatherings.

  • 8 large flour tortillas
  • 2 cups cooked shrimp, peeled and deveined
  • 1 cup Alfredo sauce (store-bought or homemade)
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup frozen spinach, thawed and drained
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Sauté the garlic in olive oil over medium heat for about 1 minute.
  3. Add the cooked shrimp and cook for 2-3 minutes until heated through.
  4. Combine the shrimp mixture with ricotta, half the mozzarella, Parmesan, thawed spinach, and Italian seasoning.
  5. Prepare a tortilla by spreading a spoonful of the shrimp mixture in the center.
  6. Roll it tightly from the bottom upwards.
  7. Pour a thin layer of Alfredo sauce into a baking dish.
  8. Arrange the roll-ups seam-side down in the dish.
  9. Drizzle the remaining Alfredo sauce over the roll-ups.
  10. Sprinkle with the remaining mozzarella cheese.
  11. Bake covered for 20 minutes, then uncover and bake for an additional 10-15 minutes.
  12. Cool for a few minutes and garnish with fresh parsley before serving.
