A comforting dish featuring chicken breasts in a rich creamy sauce with sun-dried tomatoes and spinach.

Ingredients

  • 4 chicken breasts
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat until it shimmers.
  2. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook until browned and cooked through, approximately 5-7 minutes per side. Once done, remove and set aside.
  3. Sauté the minced garlic in the same skillet for about 1 minute, stirring constantly until fragrant.
  4. Mix in the chopped sun-dried tomatoes and Italian seasoning, then pour in the heavy cream and bring to a gentle simmer.
  5. Add the spinach and stir until it wilts down beautifully.
  6. Return the browned chicken to the skillet, coating each piece in the creamy sauce.
  7. Garnish with freshly grated Parmesan cheese before serving.

Notes

Pair with garlic bread or serve over pasta or rice. Store in an airtight container for up to 3 days, reheating gently.
