A comforting dish featuring tender chicken breasts in a rich creamy sauce with sun-dried tomatoes and fresh spinach.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup spinach, chopped
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Parmesan cheese, for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper and cook until golden brown on both sides, about 6-7 minutes per side. Remove from skillet and set aside.
  2. In the same skillet, add minced garlic and sauté until fragrant, allowing the intoxicating aroma to fill your kitchen.
  3. Add the chicken broth and heavy cream to the skillet. Stir in Italian seasoning, sun-dried tomatoes, and spinach. Let it simmer for about 5 minutes, combining all the flavors.
  4. Return the chicken to the skillet, cover, and cook for an additional 5-7 minutes until the chicken is cooked through and has absorbed all those gorgeous flavors.
  5. Garnish with Parmesan cheese and serve warm, letting the creamy sauce do the talking.

Notes

For lighter sauce, consider using half-and-half instead of heavy cream. Store leftovers in an airtight container for up to 3 days.
