A warm and comforting bowl of soup filled with tender ravioli, fresh spinach, and a creamy broth, perfect for cozy evenings.

Ingredients

Scale
  • 1 package of ravioli (fresh or frozen)
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 2 cups spinach, chopped
  • 1 cup cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Parmesan cheese for serving

Instructions

  1. Sauté the diced onion and minced garlic in a splash of olive oil over medium heat until they turn translucent and fragrant.
  2. Add 4 cups of vegetable or chicken broth to the pot. Increase the heat and bring the mixture to a gentle simmer, filling your kitchen with mouth-watering aromas.
  3. Stir in the ravioli, whether fresh or frozen, and allow them to cook according to the package instructions, typically just a few minutes.
  4. Pour in 1 cup of heavy cream, followed by the chopped spinach and halved cherry tomatoes.
  5. Sprinkle in 1 teaspoon of Italian seasoning, and season with salt and pepper to taste, giving everything a good stir to combine.
  6. Allow the soup to simmer for a few more minutes until the spinach wilts beautifully.
  7. Serve the soup hot, garnished with freshly grated Parmesan cheese for that final touch of rich flavor you’ll adore.

Notes

For added flavor, serve with a crisp green salad and crusty bread. Adjust seasoning to taste as you go.
