Delightful bowls of crispy salmon bites served with fresh veggies and zesty bang bang sauce.

Ingredients

  • Salt and pepper
  • 1 cup flour
  • 2 eggs, beaten
  • 1 cup panko bread crumbs
  • Cooking oil for frying
  • ½ cup mayonnaise
  • ¼ cup sweet chili sauce
  • 12 tablespoons sriracha (to taste)
  • 2 cups cooked rice
  • Fresh vegetables (e.g., cucumber, bell peppers, avocado)

Instructions

  1. Prepare the salmon by cutting it into bite-sized pieces and seasoning with salt and pepper.
  2. Set up your breading station with plates of flour, beaten eggs, and panko breadcrumbs.
  3. Coat each piece of salmon in flour, dip into the beaten eggs, then roll in the panko breadcrumbs.
  4. Fry the breaded salmon bites in cooking oil over medium heat until golden brown, about 3-4 minutes on each side.
  5. Create the bang bang sauce by mixing mayonnaise, sweet chili sauce, and sriracha in a separate bowl.
  6. Assemble your bowl by serving salmon bites over rice and topping with fresh veggies and bang bang sauce.

Notes

For extra crunch, mix grated parmesan with panko. Use gluten-free alternatives for flour and panko if desired.
