Delicious crispy roast potatoes seasoned with herbs and spices, perfect as a side dish for any meal.

Ingredients

  • 4 cups Potatoes (Russets or Yukon Golds recommended)
  • 2 tablespoons Olive oil (or vegetable oil or duck fat)
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Rosemary
  • 1 teaspoon Thyme
  • 1 teaspoon Smoked paprika
  • Fresh herbs (optional)
  • Parmesan cheese (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash the potatoes thoroughly and cut them into even chunks.
  3. Place cut potatoes in a large pot of salted water, bring to a boil, and cook for about 5-7 minutes.
  4. Drain the potatoes and let them steam in the pot for a few minutes.
  5. Shake the pot to roughen up the edges of the potatoes.
  6. Drizzle with olive oil and sprinkle with seasonings, then toss gently.
  7. Spread the potatoes out in a single layer on a baking sheet.
  8. Roast in the oven for 30-40 minutes, turning halfway through.
  9. Check for doneness and ensure they are golden brown and crispy.
  10. Serve hot, garnished with fresh herbs or Parmesan if desired.

Notes

For the crispiest results, ensure potatoes are dry before roasting and don’t overcrowd the pan.
