Delightful crispy pan-fried dumplings filled with ground pork, napa cabbage, and spices, perfect for family gatherings.

Ingredients

  • 30 round dumpling wrappers
  • 300g ground pork
  • 1 cup napa cabbage, finely shredded
  • 2 stalks scallions, finely chopped
  • 1 tbsp fresh ginger, minced
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp oyster sauce
  • Salt and white pepper to taste
  • 3 tbsp vegetable oil for frying
  • 1/3 cup water for steaming
  • Sesame seeds for garnish
  • Chili oil for serving

Instructions

  1. Prepare the Filling: In a large mixing bowl, combine the ground pork, finely shredded napa cabbage, chopped scallions, minced ginger, and minced garlic. Add the soy sauce, sesame oil, and oyster sauce. Season with salt and white pepper to taste. Mix everything together until well combined, then refrigerate for 10 minutes.
  2. Assemble the Dumplings: On a clean surface, lay out your dumpling wrappers. Place about a tablespoon of filling in the center of each wrapper. Wet the edges of the wrapper with a little water, fold it in half to create a crescent shape, and pinch the edges to seal tightly. Arrange the finished dumplings on a floured tray.
  3. Pan-Fry the Dumplings: In a non-stick skillet, heat the vegetable oil over medium-high heat. Place the dumplings flat-side down in the pan and cook undisturbed for about 2-3 minutes, until golden brown and crispy on the bottom.
  4. Steam the Dumplings: Quickly pour in 1/3 cup of water into the pan and cover with a lid. Reduce heat to medium and steam for 6-8 minutes, until the water has evaporated.
  5. Crisp Up the Bottoms: Remove the lid and increase the heat. Let the dumplings sizzle for an additional 1-2 minutes to re-crisp the bottoms.
  6. Plate and Serve: Carefully transfer the dumplings to a serving plate, garnish with chopped scallions and sesame seeds, and serve hot with chili oil for dipping.

Notes

Make sure the edges of your dumpling wrappers are sealed well to prevent any filling from leaking during cooking. Experiment with different fillings like ground chicken or tofu.
