A comforting slow cooker recipe combining tender chicken with a creamy, flavorful sauce, perfect for family gatherings.

Ingredients

  • 2 lbs boneless, skinless chicken breasts (about 4 large breasts)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 4 cloves garlic (minced)
  • 1/2 cup sun-dried tomatoes in oil (drained and chopped)
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese (freshly grated is best)
  • 1/4 cup fresh basil (chopped)

Instructions

  1. Prep the chicken by patting the breasts dry and rubbing the seasoning all over.
  2. Place the seasoned chicken in the bottom of a slow cooker. Top with minced garlic and chopped sun-dried tomatoes.
  3. Pour the chicken broth around the chicken without rinsing away the seasonings.
  4. Cover and cook on LOW for 3-4 hours or HIGH for 2-3 hours until tender.
  5. Shred the chicken in the crockpot using two forks or remove to shred and return.
  6. Stir in the heavy cream and grated Parmesan until smooth.
  7. Turn off the slow cooker and stir in fresh basil. Let it sit for 5-10 minutes to thicken.
  8. Serve hot with desired sides.

Notes

Store leftovers in the refrigerator for up to 3 days or freeze for up to 3 months. Thaw overnight in the fridge before reheating.
