  • 2 lbs frozen potato and onion pierogies
  • 14 oz smoky kielbasa sausage, diagonally sliced
  • 1 tbsp olive oil
  • 1 large yellow onion, diced
  • 1 tbsp unsalted butter
  • 1 cup chicken broth
  • 8 oz cream cheese, softened
  • 0.5 cup heavy cream
  • 1 tsp garlic powder
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 0.25 cup fresh green scallions, finely chopped

Instructions

  1. Heat the olive oil and butter in a skillet over medium heat. Once melted, toss in the diced yellow onion and sauté until they’re soft and slightly caramelized, around 5-7 minutes. Set aside.
  2. Lay down the frozen potato and onion pierogies in your crockpot. No need to thaw them.
  3. Sprinkle the sliced smoky kielbasa over the pierogies, ensuring even distribution.
  4. Mix the softened cream cheese, heavy cream, chicken broth, and garlic powder in a bowl until creamy and smooth.
  5. Pour the cream mixture evenly over the layered pierogies and kielbasa.
  6. Sprinkle the shredded cheddar and mozzarella cheese over the top.
  7. Cover the crockpot and set it on low for 6 hours or high for 3 hours.
  8. Stir gently before serving and garnish with fresh scallions.

Notes

For a vegetarian twist, swap kielbasa with sautéed mushrooms or a mix of your favorite veggies.
