A comforting and flavorful crockpot dish made with chicken, black beans, corn, and tomatoes, perfect for busy weeknights.

  • 1 pound chicken breasts
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 cup chicken broth
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, cilantro

Instructions

  1. Place the chicken breasts in the crockpot, laying them flat at the bottom.
  2. Add the black beans, corn, diced tomatoes, taco seasoning, and chicken broth right over the chicken.
  3. Stir to combine all the ingredients, making sure the chicken is well-coated with the seasoning and liquid.
  4. Cover the crockpot and set it to cook on low for 6-8 hours or on high for 3-4 hours until the chicken is cooked through and tender.
  5. Remove the chicken breasts and shred them using two forks. Mix them back into the savory sauce.
  6. Taste the mixture and season with salt and pepper as needed.
  7. Serve hot, topping with your favorite additions like shredded cheese, sour cream, or fresh cilantro.

For an authentic Santa Fe flavor, try adding a splash of lime juice before serving. Use frozen chicken breasts by increasing cooking time by an hour.
