Delightful crostini topped with roasted cranberries and creamy Brie, perfect for any gathering.

  • 1 baguette (about 12 ounces)
  • 8 ounces Brie cheese
  • 2 cups fresh cranberries
  • 2 tablespoons olive oil
  • 2 tablespoons honey (plus more for drizzling)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • Fresh thyme sprigs for garnish, optional

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Slice the baguette into 1/2-inch thick slices and arrange them on the prepared baking sheet. Brush with olive oil.
  3. Mix together the cranberries, 1 tablespoon of olive oil, honey, salt, and pepper in a medium bowl.
  4. Bake the baguette slices in the oven for about 8-10 minutes until golden and crisp.
  5. Pour the cranberry mixture onto a separate baking sheet and roast for about 15-20 minutes until the cranberries burst.
  6. Remove the toasted crostini and roasted cranberries from the oven and let cool slightly.
  7. Assemble by placing a slice of Brie on each crostini and topping with roasted cranberries and a drizzle of honey.
  8. Garnish with thyme sprigs if desired, and serve immediately.

Notes

For variations, consider using figs or pomegranates instead of cranberries or different cheeses for a twist.
