A vibrant and festive salad that combines the flavors of tacos with pasta, topped with crunchy Doritos.

  • 1 pound ground beef
  • 1 cup cherry tomatoes, halved
  • 1 cup corn, drained
  • 1 can black beans, rinsed and drained
  • 1 cup cheddar cheese, shredded
  • 1/2 cup French dressing
  • 2 cups crushed Doritos
  • Salt and pepper to taste
  • Optional: chopped green onions and cilantro for garnish

Instructions

  1. Boil the Pasta: Cook the pasta according to package instructions. Once done, drain and let it cool.
  2. Sauté the Ground Beef: In a skillet, cook the ground beef over medium heat until browned, breaking it apart as it cooks. Drain excess fat.
  3. Combine the Ingredients: In a large bowl, combine the cooked pasta, sautéed ground beef, halved cherry tomatoes, drained corn, rinsed black beans, and shredded cheddar cheese.
  4. Dress the Salad: Pour in the French dressing and toss gently until everything is evenly coated.
  5. Add Crunch with Doritos: Gently fold in the crushed Doritos, making sure they stay somewhat crunchy.
  6. Season to Taste: Season your salad with salt and pepper according to your taste preference.
  7. Chill and Serve: Serve the salad chilled or at room temperature, garnished with green onions and cilantro if desired.

Notes

This salad keeps well in the refrigerator for up to 3 days. For best results, add more Doritos just before serving to maintain their crunch.
