Delightful and fluffy blueberry pancakes that are perfect for cozy mornings and easy to whip up.

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 cup fresh blueberries

Instructions

  1. Whisk the dry ingredients in a large bowl until well combined.
  2. Mix the wet ingredients in a separate bowl.
  3. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  4. Fold in the blueberries with care.
  5. Heat a skillet or griddle over medium heat and grease lightly.
  6. Pour 1/4 cup of batter for each pancake onto the skillet.
  7. Cook until bubbles form on the surface and then flip to cook until golden brown.
  8. Serve warm with syrup or extra blueberries.
