Quick and satisfying chicken quesadillas, perfect for using up leftovers.

  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 4 flour tortillas
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onions
  • 1 tablespoon olive oil
  • Sour cream and salsa for serving

Instructions

  1. Heat the olive oil in a skillet over medium heat until it begins to shimmer.
  2. Sauté the diced bell peppers and onions until they’re tender and fragrant, about 3-4 minutes.
  3. Mix the shredded chicken with the sautéed vegetables and cheese in a medium bowl.
  4. Assemble the quesadilla by placing a tortilla in the skillet, spooning the chicken mixture onto one half, then folding the other half over.
  5. Cook for about 3-4 minutes on each side or until golden brown.
  6. Cut the quesadilla into wedges and serve hot with sour cream and salsa.
