  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup chicken broth
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional for topping)
  • Chopped cilantro (optional for garnish)

Instructions

  1. Gather your ingredients
  2. In a crockpot, add the chicken breasts, white beans, corn, diced tomatoes, chicken broth, onion, garlic, cumin, oregano, salt, and pepper.
  3. Stir to combine gently.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours.
  5. Once the chicken is fully cooked, shred it using two forks right in the pot.
  6. Mix it all together to combine the shredded chicken with the chili mixture.
