A classic and refreshing macaroni salad with a creamy dressing and crunchy vegetables, perfect for summer gatherings.

Ingredients

  • 2 cups elbow macaroni
  • 1 cup celery, diced
  • 1 cup red pepper, diced
  • 1/2 cup red onion, diced
  • 1 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon sugar
  • Salt and pepper to taste

Instructions

  1. Cook the elbow macaroni according to package instructions. Once done, drain and let it cool in a large bowl.
  2. In a separate large bowl, combine the diced celery, red pepper, and red onion.
  3. Mix together the mayonnaise, apple cider vinegar, sugar, salt, and pepper in another bowl.
  4. Add the cooled macaroni to the vegetable mixture.
  5. Pour the dressing over the macaroni and vegetables, and toss to combine.
  6. Chill in the refrigerator for at least 30 minutes before serving.

Notes

Feel free to add herbs, use Greek yogurt, or modulate sweetness as desired.
