This Taco Pasta Salad blends classic taco flavors with pasta for a vibrant and hearty dish that’s perfect for any occasion.

Ingredients

  • 8 ounces pasta (such as bowtie or rotini)
  • 1 pound ground beef
  • 1 cup tomatoes, diced
  • 1 cup corn, canned or frozen
  • 1 cup black beans, drained and rinsed
  • 1 cup cheddar cheese, shredded
  • 1 cup creamy French dressing
  • 1 cup crushed Doritos
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions; drain and set aside.
  2. Brown the ground beef in a skillet over medium heat until cooked through; drain excess fat.
  3. Mix in a large bowl the cooked pasta, ground beef, diced tomatoes, corn, black beans, and cheddar cheese.
  4. Pour in the creamy French dressing and mix well.
  5. Season with salt and pepper to taste.
  6. Add crushed Doritos just before serving for added crunch.
  7. Serve chilled or at room temperature.

Notes

This salad can be made ahead of time; just add the crushed Doritos right before serving to keep them crunchy.
