A stunning dessert featuring a rich chocolate exterior, creamy mascarpone mousse, and a glossy mirror glaze.

  • 200g chocolate cookies, crushed
  • 100g unsalted butter, melted
  • 300g mascarpone cheese
  • 200ml heavy cream
  • 100g powdered sugar
  • 200g dark chocolate, chopped
  • 1 cup water
  • 3 gelatin sheets
  • For the mirror glaze: 200g dark chocolate
  • 100g glucose syrup
  • 100ml heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, mix crushed chocolate cookies with melted butter and press them tightly into the base of a dome mold. After pressing, place the mold in the refrigerator for about 30 minutes to firm up.
  2. In a separate bowl, beat together the mascarpone cheese, heavy cream, and powdered sugar. Mix until the mixture is smooth with no lumps, creating a fluffy and creamy texture.
  3. Melt the dark chocolate in a double boiler, stirring until completely smooth. Allow it to cool slightly before gently folding it into the mascarpone mixture.
  4. Soak the gelatin sheets in cold water for about 5 minutes. Once softened, dissolve the sheets in 1 cup of warm water, stirring to ensure they are fully melted. Combine the gelatin into the mascarpone mixture, mixing well.
  5. Carefully pour the mascarpone mousse over the chilled cookie base, smoothing the top with a spatula. Place the dessert in the freezer for at least 3 hours, or until completely set.
  6. To prepare the mirror glaze, heat the glucose syrup, heavy cream, and chopped dark chocolate together in a saucepan over low heat, stirring until the mixture is smooth and glossy. Allow it to cool slightly.
  7. Once the dessert is fully set, gently un-mold it onto a serving plate, taking care to retain its beautiful dome shape.
  8. Pour the prepared mirror glaze over the top of the dome, allowing it to cascade down the sides for an elegant finish. Chill for an additional 30 minutes before serving.
