Ingredients

  • Pomegranate Arils
  • Mixed Greens (spring mix or combination of baby spinach and arugula)
  • Feta Cheese (crumbled)
  • Toasted Pecans
  • Thinly Sliced Red Onion
  • Optional Additions (thinly sliced crisp apple or pear, orange segments)
  • Dijon Mustard
  • Honey
  • Extra Virgin Olive Oil
  • Apple Cider Vinegar
  • Salt
  • Freshly Ground Black Pepper

Instructions

  1. Prepare the Honey Mustard Dressing by combining Dijon mustard, honey, olive oil, and vinegar in a bowl or jar. Season and mix well.
  2. Prepare the Salad Components: deseed the pomegranate, wash the greens, toast the pecans, slice the onion, and crumble feta.
