  • ½ cup cottage cheese
  • 2 large eggs
  • ½ cup rolled oats
  • ½ teaspoon baking powder
  • ¼ teaspoon cinnamon (optional)
  • Pinch of salt
  • Butter or oil for greasing

Instructions

  1. Combine the mashed banana, cottage cheese, eggs, rolled oats, baking powder, cinnamon (if using), and a pinch of salt in your blender. Blend until smooth, about 30 seconds.
  2. Let the batter rest for 5 minutes to thicken.
  3. Heat your non-stick skillet or griddle over medium heat and lightly grease it with butter or oil.
  4. Pour ¼ cup of batter for each pancake and watch for bubbles on the surface, indicating they’re ready to flip. This should take about 2-3 minutes.
  5. Flip each pancake and cook until golden brown, approximately 1-2 minutes more.
  6. Serve pancakes warm with fresh banana slices and a generous drizzle of maple syrup.

Notes

For a low-carb version, substitute almond flour for the oats. Store leftovers in an airtight container in the fridge for up to 3 days.
