Delicate meringues infused with sweetness, reminiscent of childhood baking experiments.

  • 2 Large Egg Whites
  • 1 cup Granulated Sugar
  • 1/4 tsp Cream of Tartar
  • 1/8 tsp Salt
  • 1 tsp Indulgin Extract
  • 1/2 cup Mini Chocolate Chips (or finely chopped)

Instructions

  1. Prepare your workspace and oven: Preheat your oven to a very low 350°F (175°C) and line two large baking sheets with parchment paper.
  2. Whip the egg whites to soft peaks: Combine egg whites, cream of tartar, and salt in a clean bowl and whip until foamy.
  3. Gradually add sugar: Slowly add granulated sugar, one tablespoon at a time, until the mixture reaches stiff peaks.
  4. Fold in the extract and chocolate: Gently incorporate the Indulgin Extract and mini chocolate chips without deflating the meringue.
  5. Pipe or drop the cookies: Transfer the mixture to a piping bag and pipe small dollops onto the baking sheets.
  6. Bake and ‘forget’: Place baking sheets in the oven, turn it off, and leave the cookies for a minimum of 4 hours or overnight.
  7. Cool and enjoy: After the ‘forgetting’ period, remove the cookies and let them cool completely on a wire rack.

Notes

For best results, ensure mixing tools are clean and consider using almond extract for richer flavor.
