A comforting dish that combines tender chicken breasts with sweet, caramelized onions and melted Gruyere cheese, inspired by classic French onion soup.

  • 4 chicken breasts
  • 2 large onions, thinly sliced
  • 3 cups beef broth
  • 1 cup shredded Gruyere cheese
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Sauté the onions by heating olive oil and butter in a skillet over medium heat. Add the sliced onions and cook until caramelized, about 15-20 minutes.
  2. Season and add the chicken by seasoning the chicken breasts liberally with salt and pepper. Place the chicken breasts into the skillet with the onions.
  3. Pour in the beef broth over the chicken and onions, and sprinkle the thyme on top.
  4. Simmer to perfection by covering the skillet and letting everything simmer for 20-25 minutes until the chicken is cooked thoroughly.
  5. Preheat your broiler when the chicken is ready.
  6. Transfer the chicken to a baking dish, topping each breast with caramelized onions and shredded Gruyere cheese.
  7. Broil until bubbly for 2-3 minutes until the cheese is golden brown.

Notes

For beautifully caramelized onions, patience is key. You can also experiment with flavors such as adding mushrooms or using chicken broth for a lighter option.
