  • 34 pounds beef chuck roast
  • 2 large onions, thinly sliced
  • 4 cups beef broth
  • 1 cup French onion soup
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Bay leaves

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. Heat olive oil in a large Dutch oven over medium-high heat.
  3. Sear the beef roast with salt and pepper until browned on all sides.
  4. Remove the roast and set aside.
  5. Caramelize the sliced onions and garlic until caramelized, about 10-15 minutes.
  6. Add the beef broth, French onion soup, thyme, and bay leaves to the pot.
  7. Return the roast to the pot, ensuring it is submerged in the liquid.
  8. Cover and bake for 3-4 hours, until the meat is tender and falls apart easily.
