A vibrant summer salad bursting with fresh cucumbers and sweet peppers, complemented by a light tangy dressing.

Ingredients

  • 1 large cucumber
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1/4 red onion
  • 1/4 cup olive oil
  • 2 tablespoons white wine vinegar
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions

  1. Rinse the fresh produce.
  2. Prepare the cucumber.
  3. Slice the cucumber.
  4. Slice the bell peppers.
  5. Dice the red onion.
  6. Whisk the dressing.
  7. Assemble the salad.
  8. Chill the salad.
  9. Final toss and season.
