A vibrant salad featuring fresh cheese tortellini, cherry tomatoes, cucumbers, and diced beef salami, topped with feta and a homemade dressing.

Ingredients

  • 12 oz fresh cheese tortellini
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumbers, diced
  • 1 cup diced beef salami
  • ½ cup crumbled feta cheese
  • ¼ cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of salted water to a rolling boil. Add the tortellini and cook according to package instructions, about 3-5 minutes. Drain and rinse under cool water.
  2. Slice the cherry tomatoes in half, dice the cucumber, and chop the bell peppers into bite-sized pieces.
  3. Combine the cooked tortellini, chopped vegetables, and diced beef salami in a large mixing bowl. Add crumbled feta cheese and toss gently.
  4. Whisk together the olive oil, apple cider vinegar, Italian seasoning, salt, and pepper in a small bowl.
  5. Drizzle the dressing over the tortellini mixture and toss gently until everything is coated.
  6. Transfer the salad to the refrigerator and chill for at least 30 minutes.
  7. Toss the salad again before serving. Taste and adjust seasoning as needed.

Notes
