A delightful and colorful frittata filled with fresh vegetables and cheese, perfect for any meal of the day.

Ingredients

  • 6 Eggs
  • 1/4 cup Milk
  • 1 cup Cheese (sharp cheddar or mozzarella)
  • 1 cup Bell peppers (chopped)
  • 1/2 cup Onions (chopped)
  • 2 cups Spinach (fresh)
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 1 tbsp Olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Whisk together eggs and milk in a large mixing bowl.
  3. Heat olive oil in an oven-safe skillet over medium heat.
  4. Sauté onions and bell peppers until soft (about 5 minutes).
  5. Add the fresh spinach and cook until wilted (2 minutes).
  6. Combine the egg mixture with the vegetables in the skillet.
  7. Set the edges by cooking on the stove until they begin to set.
  8. Sprinkle cheese on top.
  9. Bake in the oven for 15-20 minutes until golden.
  10. Cool slightly before slicing and serve warm.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Frittata can be reheated or enjoyed cold.
