A delicious fusion of shrimp scampi and classic lasagna that combines rich garlic butter, tender shrimp, and layers of creamy cheese.

  • 9 lasagna noodles
  • 1 pound shrimp, peeled and deveined
  • 1/4 cup butter
  • 4 cloves garlic, minced
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook lasagna noodles according to package instructions until al dente. Drain and set aside.
  3. Sauté garlic in butter over medium heat until fragrant, about 1 minute.
  4. Add shrimp to the skillet and cook until pink and opaque, around 2-3 minutes. Remove shrimp and set aside.
  5. Prepare the cream sauce in the same skillet by adding heavy cream and bringing to a simmer. Stir in Parmesan cheese, lemon juice, salt, and pepper. Cook until slightly thickened, about 3-4 minutes.
  6. Build the layers in a baking dish with sauce, noodles, shrimp, and mozzarella. Repeat until all ingredients are used, finishing with sauce on top.
  7. Sprinkle remaining mozzarella cheese on top.
  8. Bake covered with foil for 25 minutes, then remove foil and bake for an additional 15 minutes until bubbly and golden.
  9. Cool for a few minutes, garnish with parsley, and serve.

Notes

For added flavor, consider using a pinch of red pepper flakes during the sautéing of garlic. You can also incorporate spinach or sun-dried tomatoes for a colorful twist.
