A comforting garlic butter steak paired with a rich Parmesan cream sauce, perfect for special occasions.

  • 1 pound steak (ribeye or sirloin)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 cloves garlic whole and lightly crushed
  • 2 cloves garlic minced
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon Dijon mustard
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Bring the steak to room temperature.
  2. Season the steak on both sides with salt and pepper.
  3. Heat oil in a large skillet over medium-high heat until shimmering.
  4. Sear the steak for 3-4 minutes per side for medium-rare.
  5. Baste steak with melted butter and garlic for 1-2 minutes.
  6. Let the steak rest tented with foil.
  7. Make the sauce by cooking minced garlic over medium heat.
  8. Add heavy cream and simmer, whisking in Parmesan and Dijon until thickened.
  9. Season the sauce with salt and pepper as needed.
  10. Slice steak against the grain and plate with sauce and parsley.

Notes

Let steak come to room temperature before cooking for even doneness. Use a meat thermometer for accuracy.
